1/2 cup butter- softened 3/4 cup sugar 2 Tbsp brown sugar 1 tsp vanilla 1 cup mini chocolate chips In a small bowl beat cream cheese and butter until light and fluffy. Add in sugar and vanilla an beat until smooth. Stir in chips. Serve with graham crackers or Nilla wafers. Or, just take a spoonful! (my favorite way) Delicious!

11/1/2023 0 Comments Copycat Breakfast crunchwrapI want to try to make more food at home since starting Noom. I am always suggesting to my son that he find copycat recipes of his favorite take out/fast foods (Taco Bell). So tonight I attempted to make him a Taco Bell breakfast Crunchwrap. It wasn't pretty, but he said it was good.
Preparing to post this, I realize I folded the wrap all wrong, so wonder it didn't stay together! AND, the photo in the recipe shows a bowl with 2 eggs in it. I didn't read the recipe before I made it, I just followed the photos - because it's a egg wrap, how hard can it be? Well, I see now the recipe calls for 3-4 eggs. No wonder the photo she shows looks like way more eggs than mine made! (I don't read recipes very well, and I always end up messing it up) And I only used one hashbrown. I swear the photo has ONE hashbrown in it! Good grief!! 3/7/2023 0 Comments Garlic mashed potatoesOkay okay...I know potatoes aren't a diet food. But everything in moderation! You don't need to eat the whole pot - even if you want to!
I am curious how it would be if I used half potatoes and half cauliflower? 10 baby potatoes 2oz Sour Cream 6 TBSP butter 4 cloves garlic Wash the potatoes, and peel the garlic cloves. Place potatoes and garlic cloves in a medium pot with enough salted water to cover by 2 inches. Bring to a boil and cook until very tender, 12-15 minutes. Reserve ½ cup potato cooking liquid, then drain and return potatoes and garlic to pot. Mash with sour cream and 6 TBSP butter until smooth and creamy, adding splashes of reserved potato cooking liquid as needed. Season generously with salt and pepper. Keep covered off heat until ready to serve. 3/1/2023 0 Comments Zucchini Carrot LatkesI made this one time years and years ago, but they were so good that how much I enjoyed it stuck with me.
I guess it's kind of healthy? At least you are getting lots of veggies in. I guess it is a little high in sodium, and that doesn't do my Lymphedema any favors...but they are so good! It's the breadcrumbs that add the sodium. It's a nice side dish, and makes me feel like I'm eating something decadent. I found a few recipes online that were close to the one I used, but not exact. So here's mine. Makes about 5 servings (mine was 6 per serving) 2 Medium Carrots shredded (about 2 cups) 2 Medium Zucchini shredded (about 2 cups) 1 egg, scrambled 2 Green Onions, chopped 2 tsp salt 1/2 cup bread crumbs 1. Use a cheese grater for the carrots and zucchini. I leave the skin on the zucchini. Use the thick side of the grater. 2. Sprinkle 2 tsp salt in the bowl of zucchini. Let it sit for 10 minutes, then use a cheesecloth or something similar and squeeze out the excess moisture. Add the shredded carrots to the zucchini. 3. Chop the green onion and add to the bowl. 4. Scramble the egg, mix into the veggies. Mix in the bread crumbs well. 5. Heat a little oil in a skillet until it glistens. Drop batter by tablespoonfuls into oil; press lightly to flatten. Fry until each side is golden brown. Serve with sour cream if desired. (or eat plain like I do) Oh, by the way... try not to eat the whole recipe yourself. It's a struggle for me, LOL! (Spinach balls cause me the same trouble, lol) 1/25/2023 0 Comments light lunch go-toMy current go-to lunch is either a peanut butter sandwich or a tomato sandwich on Italian bread. Bakery Italian bread is low in calories (as far as I can tell) and I love the texture. I toast the bread, then add one teaspoon of peanut butter - simple and delicious lunch!
Or, I toast the bread, add a teaspoon of my favorite mayo, slice up a Roma tomato, add a few pieces of tomato and some salt - boom! Easy and delicious lunch! Of course I like to snack on a bananna as a side dish. (and my water, don't forget the water) I wanted to get back to my protein shakes for lunch. I used to use Burton Nutrition, but since they stopped selling the powder, and are now going out of business, I have been on the search for a new powder that I actually like. I always used plain vanilla, that way I could make it any flavor I wanted. I also need one with Stevia in it versus Splenda. I can't tolerate Splenda. Obviously we know that's not healthy. And it is full of carbs! That doesn't help with a low carb diet...
But I found these Broccoli Tots years ago. They are so easy, only a few ingredients, and delicious! I have to fight not to eat the entire pan! They remind me of a spinach ball, which I also love and can eat the entire recipe! And if I say this is an easy recipe, then you can bet it is!
