I am curious how it would be if I used half potatoes and half cauliflower? 10 baby potatoes 2oz Sour Cream 6 TBSP butter 4 cloves garlic Wash the potatoes, and peel the garlic cloves. Place potatoes and garlic cloves in a medium pot with enough salted water to cover by 2 inches. Bring to a boil and cook until very tender, 12-15 minutes. Reserve ½ cup potato cooking liquid, then drain and return potatoes and garlic to pot. Mash with sour cream and 6 TBSP butter until smooth and creamy, adding splashes of reserved potato cooking liquid as needed. Season generously with salt and pepper. Keep covered off heat until ready to serve.
